Active dry yeast and instant yeast are not interchangeable cup for cup by weight: instant is more potent, so you typically use three-quarters as much instant yeast as the active dry amount the formula specifies. This active dry to instant yeast converter applies a single fixed conversion factor of zero point seven five, returns the equivalent instant yeast quantity in the same unit you supplied, and fails clearly when the input is negative or non-numeric so you never silently under- or over-dose a dough.
